The Cantonese came to America in the 1800s from cities including Shanghai and other ports of Canton, China. Their dialect of Chinese was the "Cantonese" dialect which included words like Kung Fu and Tai Chi and Sifu.
When Mao Tse-Tung unified China, he unified their dialect into the Mandarin version of Chinese language which includes works like Gongfu, Taiji, and Shifu.
